Desserts / Grilled Mint Pineapple Smores Mille Feuille With Tiramisu And Strawberry Ice Cream
Layers of grilled pineapple, roasted marshmallow, and graham crackers served with a double-scoop.

Pineapple soak
- Using serrated knife, skin pineapple and cut into slices 5mm thick, in the same shape as your chosen graham crackers.
- Melt sugar in water on high heat, transfer to bowl and thoroughly cool syrup in an ice bath. When syrup is cool, add shredded mint leaves and pineapple slices. Cover and refrigerate for 24 hours.
Grilling pineapple
- Take pineapple slices from syrup and shake off excess liquid. Place pineapple slices on medium-high grill for approximately 3 mins, flipping frequently to prevent burning. Pineapple slices are ready when they are caramelised and slightly brown on both sides. Set aside.
Marshmallow prep
- Cut the ends off marshmallows, as outer coating burns instead of roasts under flame.
- Further slice individual marshmallows into 3 equal-sized discs.
Marshmallow roast
- On a heat-resistant surface, place a slice of pineapple and a graham cracker next to each other. Line three marshmallow discs flat on each.
- Set propane torch to low. Run flame quickly over marshmallows to roast.
- Repeat process with half of your pineapple slices and same number of crackers. Set the other half aside.
Layering
- Transfer a graham cracker with roasted marshmallow on top of a pineapple slice with roasted marshmallows. Then, add a slice of plain grilled pineapple on top. Very gently press down.
Arrangement
- Place a scoop of strawberry ice cream and a scoop of tiramisu next to grilled pineapple mille feuille and garnish with mint leaves.
