Desserts / Flaky Apple Tart
A flaky apple tart topped with crunchy almond slices and vanilla cream.

Almond paste
- Whisk butter and icing sugar until thoroughly combined.
- Add almond powder and continue mixing.
- Stir in the egg yolk in two progressions. Whisk with whipping cream until combined.
- The amount listed is enough for multiple servings. Leftovers should be wrapped with cling film and stored in fridge.
Prep filo pastry
- Lightly brush melted butter at 35°C on a sheet of filo pastry.
- Lay another sheet on top and brush with butter.
- Lay the last sheet on top.
Shaping the pastry
- Cut into the shape of your baking pan or to your desired shape.
- Spread a thin layer of almond paste onto the pastry right to the edge.
- Brush melted butter on the baking pan. Put in the filo pastry with almond paste facing up.
Apple filling
- Chop 2cm of the apple’s top and bottom off.
- Peel and slice the apples with slicer into circular discs of 2mm thick.
- Gently flick out the seeds. Cover the pieces onto the filo pastry evenly in a spiral manner.
Baking
- Bake for 8-10 minutes at 220°C. The finished product should have a crispy crust and golden brown apple discs.
Arrangement
- Cut into six pieces and garnish with almond slices, icing sugar and vanilla cream to taste.
