A classic Southeast Asian stir-fry.

Making Kway Teow Paste
- Very finely chop and combine garlic, onions, shallots and chili flakes. Consistency should be like a paste.
- Heat oil in wok until very hot. Stir-fry garlic, onions, shallots and chili flakes until golden brown.
- On medium heat, add shrimp sauce and shrimp paste. Stir. Add sugar, salt and pepper to taste. Let cool.
Separate flat noodles
- Separate flat noodles into individual strands. Set aside.
Cutting up
- Thinly slice peppers, onions, chives and barbecued pork.
Prep eggs and prawns
- Beat eggs and stir-fry. Set aside.
- In a new wok, stir-fry prawns separately.
Stir-frying
- Thoroughly heat wok on high heat and add one tbsp oil. Add fried eggs and flat noodles, continuously toss and stir-fry.
- Add prawns and vegetables (except chives). Continuously stir-fry till cooked.
- Turn off heat, add rounded tbsp. Kway Teow paste, 1/2 tsp. light soy, 1/4 tsp. dark soy, 1/2 tsp. chicken powder and chives. Stir-fry on high heat.
Arrangement
- Dress plate with noodles and garnish with sesame seeds and julienned fried eggs (optional). Enjoy.
