The fine Italian restaurant at the Conrad Hong Kong is presenting a series of white asparagus dishes throughout the month of April. Sourced from the fertile soil of Bassano del Grappa in Italy, the white asparagus comes into its full seasonality this month, and Nicholini’s executive sous chef Michele Rodelli has put together a number of creations to showcase the noble ingredient. These include highlights such as the risotto with asparagus, marjoram and white wine, as well as the pan-roasted umbrine on asparagus with a poached organic egg. Even dessert gets in on the action, with a glazed cake with earl grey and Ceylon tea, milk chocolate tea mousse and white asparagus ice cream.
The white asparagus specialties will be available during lunch and dinner during April.
