Sausages are most often associated with street food, but so much more is possible. Gourmet hot dog restaurant BRAT celebrates the full potential of the humble snag.

There are not many restaurants with gourmet sausages in Hong Kong. Isabella Wong, owner of gourmet hot dog eatery BRAT in SoHo, opened the restaurant to address this very issue. Perhaps she could also change a perception or two along the way.

It’s clear that this restaurant is a stage for the sausage itself. According to Wong, they have often been overpowered by excessive toppings and condiments.

“People tend to do a lot with toppings and not the actual sausage,” says Wong. “Sometimes you can’t even taste the sausage. The goal here is to bring the focus back on the sausages. If done right, they’re awesome to begin with.”

Twelve varieties of premium sausages are sourced from different artisan delis in the US. They were selected for intriguing flavours and a sophistication not often associated with the versatile snack.

The Habaneros sausage includes green chilies, habaneros, jalapenos, cilantro and tequila. It tingles the taste buds without masking the interplay between chilies and herbs. The aromatic pesto sausage has stone-crushed Genovese basil, Romano cheese and garlic as primary flavours, while the sun-dried tomato and mozzarella is an explosion of herbs, smooth texture and just a touch of tartness.

The Vegetarian Chipotle deserves a special shout for health-conscious folks or vegetarians. Chipotle peppers, Chili de Arol peppers, cumin seeds and oregano come together for a delicately enticing concoction. Particular mention should also go to BRAT’s sweet potato fries, a rarity in Hong Kong.

Nine Belgian beers provide great support to the main event. Selected for their smooth mouth feel and great aroma, often flowery and slightly sweet, they are an ideal match for sausages.

It is refreshing when a restaurant celebrates a humble ingredient by pushing for its highest potential. At BRAT, the celebration has only just begun.

A generous spread with a pair of apple and bacon links reserved only for this dish. Comes with two eggs of your preferred style and served with sautéed mushrooms, tomatoes, baked beans and a golden hash brown.

A cheesy, creamy, smooth and comforting dollop of mashed potatoes served with fresh crunchy green beans and your choice of two sausages. It is a classic combination made better by the flavours of BRAT’s sausages.

Sausage Sampler
A monster in portion and flavour variations, you can choose any four of BRAT’s sausages to sample in this dish. Sauerkraut is a classic partner and, of course, caramelised onions. A great dish to pick at over a Belgian brew.

Gruyère hot dog
Choose either dark rye or BRAT’s signature bun. Any sausage is fair game for your dog, but we chose the bold Gruyère. Hot dogs are served with salad or fries with truffle mayonnaise and garlic tomato aioli.

Ragu spaghetti
Slices of their delicious pesto sausage are the star of BRAT’s comforting pasta. A traditional marinara sauce with fresh tomatoes, garlic and sautéed onions in support. Finished with Pecorino Romano cheese.
