Appetisers / Crunchy Munchy Salad
This white radish and cucumber fettuccine salad is a healthy, refreshing dish made with celery, avocados, apples and oranges. Recipe by Sebastian Guevara, Executive Chef of Wooloomooloo Group.
Dressing
- Put canola oil, red wine vinegar, honey mustard, sea salt and pepper into mixing bowl.
- Whisk gently to combine until smooth.
White radish and cucumber
- Peel white radish. Chop heads off and shave into thin slices.
- Slice off heads of cucumber and peel. Leave a few strips of the skin intact for better colour.
- Shave cucumber into thin shreds.
- Fold white radish slices into halves, then cut lengthwise into thin shreds.
Fennel and celery
- Cut head off fennel widthwise into thin circular discs.
- Scrape strings off celery, then peel half lengthwise into thin shreds.
- Cut the rest of celery at an angle into 1/2 cm dice.
Cutting fruits
- Slice green apple and orange into 1/2cm and 2 cm pieces respectively.
- Cut avocado into halves, remove core and cut 1cm criss-cross patterns on both halves. Use a spoon to scoop out the flesh.
Mixing salad
- Place white radish, cucumber, fennel, celery, green apple, avocado and orange into large mixing bowl.
- Destem watercress and add to mixture.
- Add celery leaves and use hands to gently mix, then pour dressing onto salad and mix well.
Arrangement
- Fill salad on plate into a 15cm circular mould.
- Remove from mould and garnish with sunflower seeds, sea salt and pepper to taste.
