For two nights only, HAKU is joining forces with Manila’s Gallery VASK for a night of celebration with creative food and flavours. Ranked first in Manila and 36 on Asia’s 50 Best Restaurants, Gallery VASK is headed by Spanish executive chef Chele Gonzalez who is recognised for his anthropological cuisine celebrating the shared history and culture between Spain and the Philippines. Curated by HAKU’s own Hideaki Matsuo the 10-course menu will feature creations from chef Gonzalez and HAKU’s executive chef Agustin Balbi, expect dishes like tuna tartare with purple rice cracker, lardo and sancho (Japanese pepper), sour beef ribs cooked in soyamansi and garlic casein, black cod served with kabu (Japanese turnip) and anchovy, and king crab with Koshihikari rice. The exclusive menu, priced at $1,980pp, will be available on February 23 and 24. Reservations essential.
