Silver Hill collaborates with Vida Rica Restaurant at Mandarin Oriental Macau for an exquisite menu serving the world’s finest duck.

One would not expect less from Mandarin Oriental Macau’s only fine-dining establishment, Vida Rica. The restaurant sports a contemporary east-meets-west interior with dark marble and subtle touches of Chinese elements. Its usual menu features an array of Chinese and European fare, as well as dishes inspire by Macau’s Portuguese influence, but on this visit, we’re here to try a special menu showcasing the exquisite flavours of Silver Hill duck, regarded as the world’s finest duck by celebrity chefs Heston Blumenthal and Gordon Ramsay.
The Silver Hill duck tasting menu and à la carte items are crafted by executive sous chef Ethan Hiew and chef de cuisine Matthias Knilling to demonstrate the versatility of this unique and cultivated hybrid from the Aylesbury duck and the Peking duck. We started with the Applewood-smoked duck. The nuanced flavour of the thinly sliced duck breast was picked up by the tanginess of pickled beetroot and cranberries, while gorgonzola and roasted nuts both added texture and complexity to the dish. Next was drunken duck, our favourite dish of the night. The minimally prepared sliced duck breast, when poached in superior broth with pepper and rice wine, achieved a mouthfeel reminiscent of premium sliced beef for shabu-shabu. The usual gamey taste of duck was absent in the Silver Hill duck, which paired perfectly with sea cucumber for a warm, clean dish. We enjoyed the Portuguese-style duck rice, wok-fried sliced duck breast and Hong Kong-style roasted duck that followed, but none were as memorable as the last main course of the night: the slow-cooked duck confit. The duck leg was moist and packed with flavour, and the braised radicchio’s slight bitterness and the tartness of the pickled pumpkin cut through the crispy skin’s oiliness and the saltiness of the meat.
The Silver Hill duck dinner was thoroughly enjoyable with each dish, inspired by different cuisine, executed with finesse. The wine pairing was also lovely, and we look forward to seeing Silver Hill duck served at restaurants in Hong Kong.
