Duck is such a fantastically versatile ingredient, and you can now try an array of exquisite Silver Hill Duck dishes at Vida Rica Restaurant at Mandarin Oriental, Macau. Can only be found at the Silver Hill Farm in Emyvale, Ireland, Silver Hill Duck is a unique hybrid of the Aylesbury duck and Peking duck, and are reared on a specially formulated wheat and soy-based diet that costs more than double the standard duck feed. Highly regarded by celebrity chefs Heston Blumenthal and Gordon Ramsay, Silver Hill Ducks do not have the usual gamey taste or smell, and the higher fat content helps keep the meat juicy during roasting. The result? Crispy skin yet succulent flesh.
To demonstrate the distinct flavour of this duck, Vida Rica’s executive sous chef Ethan Hiew and chef de cuisine Matthias Knilling have teamed up to create a special menu of Silver Hill Duck dishes like slow-cooked duck confit and drunken duck. The dishes, offered from now until December 22, are available à la carte, as well as in a tasting menu priced at MOP588 per person.
