Ever tasted bison? If your answer is no, now’s your chance. For the first time in Hong Kong, Grand Hyatt Steakhouse is bringing the great American bison onto the dining table. Deemed the new healthy red meat with a rising popularity in the US, bison are free range and naturally and ethically raised. Compared to beef, their meat is lower in fat and cholesterol, and higher in protein. Bison meat are also leaner and more tender than beef.
Grand Hyatt Steakhouse’s chef Gerhard Passrugger has crafted a special menu, with highlights including bison tartare and 12-month-aged buffalo cheese, bison bone-in ribeye charred with bamboo ash and flambéed with bourbon and roasted garlic butter, as well as maple glazed short ribs smoked with bison herbs.
