This August, Épure is adding a touch of luxury to your plate with blue lobsters sourced from the coast of Brittany. Chef Nicholas Boutin has crafted a four-course dinner menu ($1188pp, plus $620 with a four-glass wine pairing option) featuring this rare delicacy, pairing it with selected ingredients perfect for the summer months.
Highlights include an appetiser of blue lobster with heirloom carrot, baby artichoke and elderberry vinaigrette, striking the perfect balance of fruity, sweet and acidic. For something warmer, the shellfish consommé made with lobster shells and velvet crab is finished with petit pois, celery and a lobster tomalley mouse for an elegantly fresh finish. Guests will also enjoy a caramelised mille-feuille with fresh strawberries and lime zest chantilly prepared table side to complete the meal.
