Chef Umberto Bombana’s Octavium is smaller and more private than his acclaimed 8½ Otto e Mezzo Bombana. He likes to call Octavium his “laboratory”, where he employs new and experimental concepts in his dishes, while staying loyal to his philosophy of cooking with heart and passion.
