Conscious Drinking with Potato Head’s New Cocktails

Inspired by the Indonesian cultural principle of using all elements of an ingredient, Potato Head’s award-winning bar operations manager Tom Egerton has come up with an all-new cocktail menu with a focus on conscious drinking highlighting reused ingredients; while the flesh of fruits are juiced for drinks, the skins are used for garnishes, and coconut husks are smoked for aroma – you get the idea. Our favourite on the menu is Dark & Stormy ($115), a spiced rum concoction with peanut syrup, fluffy pineapple, lime and spicy ginger beer. The Java Sour ($115), made with blended scotch, pimento dram, roast citrus, tamarind and nutmeg, is a close second. Be sure to try the cocktails with some delicious small bites. We love the fried tempeh with sambal, and the Javanese fried prawn and mackerel dumplings.
