April 17 to 30: Buysse Brothers are Back in Hong Kong

The Buysse Brothers of Blend are in town to celebrate Dutch Days with a Van Gogh-themed menu at Conrad’s Brasserie on the Eighth. Chef Hendrik’s interpretation of Sunflowers, one of Van Gogh’s most revered pieces, translates onto the plate as pincanha (sirloin cap) steak tartare with arugula, sunflower seeds and pumpkin, while the painting The Harvest, which features the simple country life of Arles in France, is represented by French garlic, Zeeland cockles, sweetbread and nasturtium.

Don’t forget to try one of Kamiel’s cocktails, especially his interpretation of Almond Blossom and Wheatfield under Thunderclouds, for which he mixes wheat grass, apple, almond and absinth into a delectably artful concoction.

The Dutch Days with Buysse Brothers is on from April 21 to 30. Four- and six-course dinners are $830 and $1,080 respectively, with options to include cocktail and wine pairings (from $270). Hendrik’s dishes are also available in a lunch set and at a special cooking class, while some art-inspired tapas and cocktails by Kamiel can be found at Pacific Bar.
