Chef Chan has taken a more health-conscious approach and devised a menu of brand new signature dishes fit for a king. We particularly fancy the sautéed king prawn with crab meat and sea urchin, as well as the steamed sliced spotted garoupa with egg white in pumpkin sauce. The creamy egg white pearls in the latter dish blends perfectly with the pumpkin flavour as the perfect autumn comfort dish.
