One Week Only: Tapas with an Asian Twist at La Paloma

La Paloma in trendy Sai Ying Pun has invited chef Álvaro “El Palanca” Ramos to create a seasonal tasting menu with an Asian twist. The Madrileño travelled across Asia and opened the award-winning Tomatito in Shanghai, and now he’s in town to give diners a peek into the perfect marriage of Spanish flavours and Asian ingredients.

There’ll be seven classic Spanish dishes to please the palate. We particularly fancy the melt-in-the-mouth short ribs over a bed of saffron paella, while the passion fruit, sweet pepper and salted caramel Catalan cream is the perfect finale to a great meal. Check out the menu:

Tortita de camarones
Andalusian shrimp fritters with El Palanca aioli

Mejillones con agua de coco verde Thai
Thai-style mussels in coconut water

Hamachi y tomates confitados
Hamachi tatami with confit tomato

Taco taco de papada de cerdo canton style y chutney de piña
Slow-cooked pork taco with goat’s cheese and pineapple salsa

Arroz de azafran
Short ribs over saffron paella

Mojito de shiso
Shiso mojito shot

Crema catalana 016 El Palanca
Passion fruit, sweet pepper and salted caramel crèma catalana

Chef El Palanca’s menu is available from August 16 to 21 and priced at $398 per person.
