With new executive chef Samuel Wilkes comes a refreshed ZUMA menu that will have you thinking about it for days. With innovative product sourcing and “back to basics” cooking techniques in mind, chef Wilkes delights tuna lovers with the grilled toro steak with wafu sauce and watercress ($480). The lightly seared, melt-in-your-mouth fish is freshly made from the belly of sustainable Ten-Qoo Maguro tuna. We also fancy the spicy beef tartar, quail egg and nori toast ($185). The fragrant sauce made from ponzu, mayo, yuzu and Japanese chilli gives the Australian hand-cut Angus beef a nice kick. Set lunch menu prices start from $380 per head.
