Taking up the space where Sushi To used to be, Shiki Zen is a Udon specialty eatery where the Japanese noodles are served with various seasonal ingredients. The menu boasts two types of noodles: Sanuki Udon, which has a bouncy bite and is popular in the Shikoku region, and the thinner and more delicate Kyoto Udon. The broth is simmered for 24 hours to ensure the perfect, fragrant bowl with a beautifully complex depth of flavour. Under the watchful eye of executive chef Norihisa Maeda (who was the executive chef at Sushi To), signature dishes include homemade Udon with toppings such as Hokkaido taraba king crab and clams ($198), A5 wagyu beef shabu shabu with onsen tamago ($228), and a homey classic of chicken and mixed mushrooms ($138). The restaurant will feature a main Japanese-style contemporary dining room, a station where diners can watch Udon masters hand-make noodles, a sake and sushi bar, and two private dining rooms. Shiki Zen opens from 12pm to 10:30pm for lunch and dinner every day.
